The berries serve to make wine, cordial, puddings and medicinal teas and syrups (see p175 in A Medicine Chest from the Wild for the many medicinal properties of elder).
Once gathered, keep the gloves on to wash and prepare the nettles, although as soon as they feel the heat of cooking, the stings disappear.
